FLAGSTAFF — Carne Asada Fries. Mini tacos. Breakfast burritos.
And so much more.
Beginning Aug. 23, Alejandro’s Mexican Food will move out of the food truck and onto the Coconino Community College Lone Tree Campus.
“Good eating promotes learning and better grades,” said Alejandro’s owner Georgette Quintero. “I’m hopeful they’ll love our menu as much as Flagstaff does.”
The menu is an authentic and filling one to get students, employees and guests through a day of learning and working without being hungry, she added. For breakfast, there will be Mexican-style breakfast burritos, eggs, potatoes, steak and eggs, and more. For lunch, there will be the fare everybody has come to know from their food truck menu – including the famous Carne Asada Fries, mini tacos, quesadillas, burritos, chimichangas and elotes (cooked sweet corn).
Quintero said that as the restaurant gets established, the staff will be adding more items to the menu, including salads, desserts and American-style food, like hot dogs for a change on some days.
The doors will be open for business from 9 a.m. to 5 p.m. to start, but that could change to 8 a.m. to 5 p.m. or 8 a.m. to 6 p.m.
“We’ll see how the mornings go,” Quintero said.
